Good Monday. I hope you had a good weekend. I spent mine in the Finnish archipelago, ate amazing food, went to the sauna, played cards, drank wine… ahh. Let’s kick-off this new week with a fresh watermelon-feta salad.
Watermelon-feta salad

Ingredients
- 1/2 small watermelon
- 1/2 pack quality feta cheese
- Fresh mint
- 1 spring onion
- Olive oil
- Lemon juice
- Salt & Pepper
Directions
- Step 1
- Cut the watermelon and onion into small bites.
- Step 2
- Crumb the feta cheese into small pieces.
- Step 3
- Make a vinaigrette of oil, lemon juice, salt & pepper and pour it over.
- Step 4
- Cut the mint and mix around carefully.
- Step 5
- If I were you I would top it with some pistachios as well, but I did not have any at home.
