Not sure what to make for dinner, vegetarian Edamame spaghetti is a great option. This vegetarian pasta dish was invented by mistake but is very quick and easy to make and will not leave you with a heavy pasta stomach afterward. Edamame Spaghetti with dried-tomatoes, artichoke, kale, and feta cheese. This was something I whipped together from ‘random things I had at home’ but it turned out pretty good.

Vegetarian Edamame spaghetti

Ingredients
- 1 pack Edamame Spaghetti
- Olive oil
- 1 yellow onion
- 2 cloves garlic
- A handful of green kale
- 1/2 dl canned artichoke
- 1 dl dried tomatoes
- 1/2 dl oat cream
- Bruschetta spice mix
- Salt & Pepper
- Fresh thyme
- Chili flakes
- Feta cheese
Directions
- Step 1
- Boil salted water for the edamame pasta.
- Step 2
- Fry the chopped onion and garlic in olive oil until golden.
- Step 3
- Add green kale, artichokes, and dried tomatoes and fry for a few minutes, add the oat cream, spice mix, salt, and pepper and fry on medium heat for a while.
- Step 4
- Boil the pasta for a few minutes and add to the sauce along with 1/2 dl of the pasta water and heat up for a few more minutes.
- Step 5
- Serve with fresh thyme and crumbled feta cheese and top with chili flakes.
