Vanilla waffles with caramelized banana

Ingredients
- Vanilla waffles:
- 2 dl oat flour
- 1 dl almond flour
- 1 tsp baking powder
- 2 tbsp melted coconut oil + for frying
- 2 tsp psyllium husk
- 1 1/2 yoghurt / plant-based yoghurt
- 1-2 dl oat/almond milk
- 2 eggs
- 1/2 tsp pure vanilla powder
- Pinch of salt
- Cinnamon yogurt:
- 1 dl yoghurt / plant-based yoghurt
- 1 tsp Cinnamon
- Toppings:
- 2 bananas
- 2 + 2 tbsp maple syrup
- Coconut shaves
- Granola
Directions
- Step 1
- Mix the ingredients by hand or in a mixer and let it sit for 10 minutes. Add more liquid if it’s too compact.
- Step 2
- Heat the waffle iron and brush it with coconut oil.
- Step 3
- Fry the waffles one by one.
- Step 4
- Cut the bananas in half.
- Step 5
- Heat up coconut oil in a pan and place the halved bananas.
- Step 6
- Fry for a few minutes on each side. In the end, pour in about 2 tbsp maple syrup and caramelize the bananas.
- Step 7
- Mix the yogurt with cinnamon.
- Step 8
- Serve the freshly baked waffles with caramelized banana, coconut shaves, granola, and cinnamon yogurt.
