Ok, listen to this. Home-made sweet potato wraps straight from the pan. These are super simple to make, yes they require a bit more time than store-bought (duh) but are so so so so so so worth the tiny effort. Here comes my gift to you, the recipe.
Sweet potato wraps

Ingredients
- Wraps:
- 2 medium-sized sweet potatoes
- 1/2 tsp salt
- 5 dl spelt flour
- Lentils:
- 1 pack lentils in water
- A handful of green kale
- 1 small onion
- Olive oil
- Salt & Pepper
- Sauce:
- 1 dl Turkish yogurt
- 1 tbsp sweet chili sauce
- Chili flakes
- Toppings:
- Roasted sweet potato
- Feta cheese
- Spinach
- Pickled onion
Directions
- Step 1
- Start by heating the oven to 200°C. Do NOT peel your sweet potatoes, instead place them in the oven and bake for 1 h until they are completely soft. Peel them as soon as you can touch them without burning your fingers. I mixed mine with a hand blender and added salt and flour. You may need to add more flour until the dough is not sticking to your fingers anymore. Cut into small pieces and roll thin wraps.
- Step 2
- Make the lentils. Chop the onion and fry it in olive oil. Add the lentils, kale and salt & pepper. Mix the ingredients for the sauce.
- Step 3
- Bake the wraps in a dry pan until small bubbles start to form, switch side. Fill with lentils and toppings and sauce.
- Step 4
- Fill your wrap with lentil mix, the rest of the fillings and sauce!
