Spinach-fennel-pear-honey-walnut salad

Ingredients
- 1 pack spinach
- 1 pear
- 1/2 fennel
- 2 dl walnuts
- 2 tbsp olive oil
- 1 + 2 tbsp honey
- 1 tbsp lemon
- 1 tbsp apple cider vinegar
- Salt & Pepper
- Blue / goat cheese (optional)
Directions
- Step 1
- Slice the pear and fennel thinly and place in a bowl with the spinach.
- Step 2
- Mix together olive oil, 1 tbsp honey, lemon juice, apple cider vinegar, salt and pepper and pour over the greens and blend.
- Step 3
- Heat up a dry pan to medium heat, throw in some salt and toast the walnuts – At the very end, pour in about 2 tbsp of honey and caramelize the nuts quickly (15 seconds) and remove from heat and let the nuts cool.
- Step 4
- Top the salad with honey walnuts and blue or goat cheese.
