How are you in these crazy times? Don’t know about you but it seems like so many have time to cook and bake at the moment, so at least something nice in these otherwise sad times. I wanted to share with you one of my go-to recipes for dinner or lunch. Smoked salmon salad with chimichurri.

Salmon salad with chimichurri

Ingredients
- Salad:
- Handful of spinach
- Handful of salad
- Handful of green kale
- Broccolini
- Garlic
- Avocado
- Fennel
- Smoked salmon
- Pomegranate
- Sesame seeds
- Feta cheese
- Chimichurri:
- 1 pack leaf parsley
- 1 pack parsley
- 3 cloves garlic
- 1 chili pepper
- 1 dl olive oil
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- 1/2 lemons juice
- Salt & Pepper
Directions
- Step 1
- Start by chopping all the ingredients for the chimichurri very small, place in a jar, pour over olive oil and blend with a spoon until everything is soaked. Let it rest in the fridge.
- Step 2
- Cut the garlic and heat up some olive oil in a pan and fry the broccolini for a few minutes.
- Step 3
- Wash the greens and place them in a bowl.
- Step 4
- Top with smoked salmon, thin-cut fennel, pomegranates, sliced avocado, broccolini, sesame seeds and a generous swirl of chimichurri.
- Step 5
- P.S. We also had crumbled feta cheese on top but forgot to add it for the picture.
