This salad is goals. Salad does not have to be healthy and boring, it can be healthy and absolutely delish. If I get served iceberg lettuce, cucumber, and tomato cut in wedges I cry on the inside cuz it doesn’t get more uncreative than that in my opinion. Don’t be like that, make this instead. It’s a kale-spinach-avocado-lentil-marinated zucchini-almond salad with manchego cheese…behind you see a white bean – pea hummus.

Ingredients
- Green kale
- Baby spinach
- 1/2 zucchini
- Green lentils
- Fresh parsley
- 1 avocado
- Almonds
- Lemon
- Olive oil
- Apple cider vinegar
- Manchego
- Salt & Pepper
- Honey
- Hummus:
- 1 pack white beans
- 1 dl frozen peas
- Olive oil
- Lemon
- Chili flakes
- Salt & Pepper
Directions
- Step 1
- Start by shaving the zucchini and marinate it in some olive oil, lemon, salt, and pepper.
- Step 2
- Roast the almonds in a tiny bit of oil and salt.
- Step 3
- Throw the spinach, kale, parsley and washed lentils in a bowl. Pour in some olive oil, apple cider vinegar, lemon juice, salt, pepper, honey, and mix around carefully!
- Step 4
- Place the salad on a plate, top with the zucchini, avocado, almonds and shaved manchego!
- Step 5
- For the hummus, you wash the beans, defrost the peas in some water and throw them and the rest of the ingredients in your blender and voilà, the most unboring salad is born.
