After a less ’healthy’ and more ’fun’ weekend behind I can’t wait to start Monday off with this fresh rhubarb smoothie bowl topped with honey caramelized buckwheat.
Rhubarb smoothie with caramelized buckwheat

Ingredients
- Smoothie:
- 1 dl frozen rhubarb
- 1/2 dl fresh rhubarb (optional)
- 1/2 dl frozen strawberries
- 3 dates
- 1/2 lemon juice
- 1 1/2 dl almond milk
- Caramelized buckwheat:
- 2 tbsp buckwheat
- Honey
- Pinch of salt
Directions
- Step 1
- Mix the ingredients for the smoothie in a blender. Place the buckwheat in some water and let soak for a few minutes (better for your stomach) and transfer them into a dry pan. Swirl over honey and salt and caramelize on medium heat. Top your smoothie with this, blueberries, coconut and almond butter. I wish you all a good week.
