Here comes the much-requested recipe for Ramen Soup with spicy meatballs. It’s soo good and warming, and actually quite healthy. A true Ramen specialist would probably be very insulted by this recipe, but this is MY Ramen ok?

Ingredients
- Spicy meatballs:
- 500g minced meat (I prefer game)
- 1 minced yellow onion
- 1 minced red pepper
- 2 eggs
- 2 cm minced ginger
- 2 cloves minced garlic
- 2 tbsp sesame seeds
- 1 tsp paprika powder
- 1 tsp onion powder
- 1 tbsp soy sauce
- Chili powder
- Salt & Pepper
- Ramen soup:
- 1.5 l water
- 2 tbsp sesame oil
- 2 tbsp mirin or rice vinegar
- 1 dl soy sauce
- 5 cm minced ginger
- 4 minced garlic cloves
- 2 tbsp agave syrup
- 3 tbsp vegetarian broth
- 1 tsp chili paste (optional)
- Toppings:
- Small mushrooms
- Boiled eggs
- Fresh coriander
- Pak Choi
- Noodles
- Spicy meatballs
Directions
- Step 1
- Heat the oven to 200°C.
- Step 2
- Place the meat in a bowl, add all the ingredients and gently fold into the meat.
- Step 3
- Form small balls and place them on a baking sheet covered pan and bake in the oven until cooked through and crunchy, about 30 minutes.
- Step 4
- Pour all the ingredients into a pan, let it boil on medium heat for about 30 minutes.
- Step 5
- Stir fry the mushrooms and pak choi in some oil, salt, and pepper.
- Step 6
- Boil the eggs for about 6 1/2 minutes.
- Step 7
- You can either cook the noodles in the broth (needs to very hot then) or pre-cook them and just add them when you are ready to dine.
- Step 8
- Pour the broth into bowls and top with mushrooms, eggs, pak choi, noodles, meatballs and coriander.
