Oven-baked sweet potatoes

Ingredients
- 2 sweet potatoes
- Olive oil
- 1 pack tofu
- Mushrooms
- Broccolini
- Feta cheese
- marinade:
- 2 tbsp soy sauce
- 2 tsp honey
- 1 chopped chili
- Salt & Pepper
- Lime sauce:
- 2 dl yogurt
- 1 lime + zest
- 1 tsp honey
- 1-2 cloves garlic
- Salt & Pepper
Directions
- Step 1
- Heat the oven to 200°C.
- Step 2
- Wash the sweet potatoes thoroughly and dry them. Don’t peel them, the skin is filled with vitamins and is so delicious when oven-baked.
- Step 3
- Cut the sweet potatoes in half. Tuck small holes in the skin of the sweet potato all over. Place with the skin down in a baking sheet covered pan, drizzle some olive oil on top and bake in the oven for about 50-60 minutes. The sweet potatoes should be soft in the middle and a bit crunchy on the outside.
- Step 4
- Meanwhile, make the marinade for the tofu. Cut the tofu in slices and press out the liquid between two papers from each piece.
- Step 5
- Place them in a bowl and pour over soy sauce, honey, chili, and salt & pepper and let them rest in the fridge for 1 hour.
- Step 6
- For the sauce, place the yogurt in a bowl along with the zest and juice from 1 lime, honey, minced garlic, salt & pepper.
- Step 7
- Store in the fridge.

- When the sweet potatoes are ready, turn the oven off but let them rest there. Fry the tofu slices in a pan along with the marinade and add mushrooms. Fry broccolini quickly in some olive oil. Serve the sweet potatoes with tofu and mushrooms, broccolini, and top with lime sauce and feta cheese.
