Waffle-Tuesday. The beauty of the holidays is that it’s weekend every day. I try my best to stay even a little healthier every second day. These waffles contain no white flour or refined sugar. Top them with loads of fresh berries.
Healthy waffles

Ingredients
- 1 ripe banana
- 2 eggs
- 1 dl plant-based milk
- 2 dl spelt flour
- 1 tsp vanilla
- 1 tsp baking powder
- 1 tbsp honey or syrup
- Pinch of salt
- Coconut oil for baking
Directions
- Step 1
- Place the banana, eggs, and milk in a bowl and smash or mix with a hand blender as I did. Mix the flour with baking powder, vanilla, and salt and add to the bowl. Mix well! If the dough is too dry add milk and if too loose add flour. Add syrup according to how sweet you like them! Bake them in coco oil and dust with stevia sugar. I ate mine with blueberries and syrup.
