HAPPY EASTER. I hope you get to celebrate somehow. If not, at least have a lot of chocolate. I made these (yes, healthy) chocolate easter cupcakes and they turned out very, very good. Plus, they are SO cute. Have a great Easter weekend.

Healthy chocolate easter cupcakes

Ingredients
- Cupcakes:
- 3 dl oat flour
- 1 dl almond flour
- 1/2 dl organic raw cacao powder
- 1/2-1 dl coconut sugar
- 1 tsp baking soda
- Pinch of salt
- 1 dl (oat) milk
- 1 dl (oat) yogurt
- 1/2 dl melted coconut oil
- 1 tsp vanilla powder
- 2 eggs
- Frosting:
- 1 pack (oat) cream cheese
- 2 tbsp organic raw cacao powder
- 2-4 tbsp agave syrup
- Decoration:
- Shaved raw cacao
- Coconut shaves
- Easter eggs
Directions
- Step 1
- Heat the oven to 175°C.
- Step 2
- Mix the dry ingredients in one bowl and the wet ingredients in another.
- Step 3
- Add as much sweetener as you wish.
- Step 4
- Blend the two together into an even dough! Scoop into muffin molds.
- Step 5
- Bake in the oven for about 15-20 minutes. Let cool completely.
- Step 6
- Mix the ingredients for the frosting.
- Step 7
- Top the cooled muffins with frosting and decorate with shaved chocolate and cocoa shaves and Easter eggs.
- Step 8
- Enjoy.
