Halloumi-carrot patties you all! These take about 20 minutes to make and the same amount of time to bake and they taste so much better than store-bought vegetable patties full of shitty additives. They go very well with a spicy mango-yogurt sauce. This is one of my weekday favorites when it comes to dinner.
P.S. If you want them gluten-free, use glutenfree breadcrumbs or add more potato starch.

Ingredients
- Patties:
- 1 pack halloumi cheese
- 6 carrots
- 1/2 dl breadcrumbs
- 1 tbsp potato starch
- 2 eggs
- 1/2 pack fresh chives
- 1 tsp chili flakes
- Salt & pepper
- Olive oil
- Sauce:
- Yogurt
- 2 tbsp mango chutney sauce
- 1 tsp sambal oelek
- Santa Maria Berbere spice
- Salt & Pepper
Directions
- Step 1
- Mix all the ingredients and let it sit for 10 minutes.
- Step 2
- Pour the dough on a baking sheet and press the dough with another baking sheet until thin and covers the whole underlying baking sheet. Do you understand? If not then just make the dough as thin as you can with any method you wish.
- Step 3
- Heat the oven to 100-150°c. Bake for 1-1.5 h. They should be completely dry and golden brown when ready.
