Let’s get one thing straight. I love bread. I love bread more than you love bread. Unfortunately, I’ve lately been diagnosed with a situation where I really should avoid a lot of things.. of which one is grains, which means as you understand I can’t eat bread. But, instead of feeling sorry for myself, I decided to make the best out of the situation, and here you have the result. A healthy, grain-free, gluten-free bread filled with yummy nutrition. I eat this goddess with @Oatly cream cheese, avocado, and vegetables or some delish hummus. Keep it wrapped in some baking paper and it will last for a week (not mine since you know I love bread). Pssst. If you think the list of ingredients is too long, keep the amount the same but swap the different seeds and nuts to one kind only. Don’t overcomplicate things.

Grain-free nut bread

Ingredients
- 1 dl chickpea flour
- 1 dl flaxseeds
- 1 dl sunflower seeds
- 1 dl pumpkin seeds
- 1 dl sesame seeds
- 1 dl almonds
- 1 dl pecans
- 1 dl walnuts
- 1 dl dried cranberries
- 1 dl dried blueberries
- 3-4 eggs
- 1 dl oil
- 1 tbsp flake salt
- 1 tsp crushed cumin
- 1 tsp crushed fennel
Directions
- Step 1
- Heat the oven to 175°C.
- Step 2
- Mix all the ingredients in a bowl.
- Step 3
- Prep a loaf pan with a baking sheet and add the dough. Bake for 30-60 minutes (depends a lot on your oven).
- Step 4
- Enjoy with your favorite toppings.
