Happy Thursday people. Today I’m sharing one of my most asked for recipes – Glutenfree Spinach Patties. This was my favorite dish as a kid, I ate it at least once per week. I wonder, are these a thing outside the Nordics? Anyways if not, let’s bring #spenatplättar back. This recipe makes a shitload of patties.
Glutenfree Spinach Patties

Ingredients
- 2 packs of baby spinach (á 75g)
- 2 eggs
- 5 dl milk (Oatly works fine)
- 3 dl oat flour
- 1 dl buckwheat flour
- 1 tsp salt
- 2 tsp agave syrup
- Butter + olive oil
- +
- 2 dl lingonberries
- 2 tsp syrup
Directions
- Step 1
- If you don’t have oat flour at home, you don’t have to (like my sister) spend 20 minutes in the store looking for it since you probably won’t find it. Instead, take 3 dl oats, throw them into your blender and press ON and let go until you have oat flour. Leave the flour in your blender, add the rest of the ingredients and press on again until you have a loose dough!
- Step 2
- You can swap the flour to regular, but make sure to add more / less liquid if needed. Let it sit for 15 minutes.
- Step 3
- Heat up some olive oil AND butter in a pan (you can use coconut oil if you want to be healthy and lame) and scoop in about 1 dl dough and fry until golden and crispy.
- Step 4
- Eat with mashed lingonberries.
