Gluten-free protein waffles

Ingredients
- 6 waffles:
- 1 dl oat flour
- 1 dl almond flour
- 1 tsp baking powder
- 2 tsp psyllium husk
- 100 g cottage cheese
- 1-2 dl oat/almond milk
- 2 eggs
- Pinch of salt
- Smoked salmon:
- 250 g smoked salmon
- 1 dl Turkish yogurt
- 1/2 dl creme fraiche
- 1/2 lemon’s juice
- Red onion
- Parsley
- Salt & Pepper
- Spinach salad:
- 1 pack baby spinach
- Cherry tomatoes
- Feta cheese
- 1 tsp Olive oil
- 1 tsp Apple cider vinegar
- 1 tsp Honey
- Salt & Pepper
Directions
- Step 1
- Mix all the ingredients for the waffles in a blender into a smooth dough (or without a blender if you don’t have one).
- Step 2
- Add more milk if it’s too compact.
- Step 3
- Let it sit for about 15 minutes.
- Step 4
- Meanwhile, make the fillings.
- Step 5
- For the salmon, mix all the ingredients and add salt and pepper according to taste.
- Step 6
- Wash the spinach and add the tomatoes and crumble the feta cheese.
- Step 7
- Add olive oil, vinegar, and honey straight to the mix.
- Step 8
- Top off with salt and pepper.
- Step 9
- Grease your waffle iron with oil and bake and top with spinach salad and salmon.
