Can you make healthy, yet delicious treats?
The answer is yes yes yes, you can. There are tons of amazing ingredients available today and you can make almost anything you want, with a healthy twist. I’m a strong believer in adding ingredients that boost your health and I try to make every meal as nutritious I can by adding spices, herbs, superfoods, healthy fats, proteins, the list goes on and on. I personally do not eat gluten due to the inflammation it causes in my body, and I’m so happy about all the options there are available today to replace regular flour with. I try to swap refined sugar to more natural options and simply eat as clean and organic as I can.
Let’s talk about the recipe
In this post, I will share a recipe for gluten- and refined sugar-free blueberry bites. You can make smaller pies or one large, whatever you prefer. I’ve tried both versions and this is hands-down my favorite blueberry recipe ever. The oats and nuts give perfect texture, and all the warming spices combined with blueberries, wow. Foodin has great, organic spices available, and I used a generous amount of their cardamom, cinnamon, and vanilla extract in this recipe. Gluten- and refined sugar-free blueberry bites

Ingredients
- 2 dl oats
- 2 dl mixed nuts
- 4 tbsp Foodin shredded coconut
- 4 tbsp Foodin coconut oil or ghee
- 2 tbsp Foodin coconut sugar
- 2 tbsp maple syrup
- 1 tsp Foodin ground cardamom
- 1/2 tsp Foodin ground cinnamon
- 1/2 tsp Foodin bourbon vanilla extract
- 1/2 tsp salt
- 2 dl blueberries, fresh or frozen
Directions
- Step 1
- Heat the oven to 175°C.
- Step 2
- Crush the nuts gently in a mixer or by hand with a knife and place in a bowl.
- Step 3
- Add oats, shredded coconut, coconut sugar, maple syrup, cardamom, cinnamon, vanilla extract, and salt and blend well.
- Step 4
- Melt the coconut oil or ghee and add it to the mixture.
- Step 5
- Taste it and add more spices, sweetener, or salt if needed.
- Step 6
- Press the dough into 4 small molds or 1 larger one and add the blueberries.
- Step 7
- You can save some dough to place on top.
- Step 8
- Bake in the oven for about 25-35 minutes.
- Step 9
- Enjoy with a scoop of vanilla ice cream or vanilla sauce.
