There have been soo many questions about these “french gingerbread cookies” so here goes. These are probably the best Christmas cookies I know. Both kids and adults love them and they go very well with blue cheese. Note! Make the dough the night before, let it rest in the fridge over night, the day after, cut into cookies and bake. If you don’t have time for this you can freeze the dough for about 1h and bake immediately. I’ve tried 5 different versions of this recipe and I think these measures make the best cookies.

Ingredients
- Gingerbread
- 2 dl fine caster sugar
- 5 dl wheat flour
- 2 tsp organic cinnamon
- 2 tsp gingerbread spice*
- 1 tsp baking soda
- 1 dl light syrup
- 0.5 dl dark syrup
- 220g butter
- 100g shaved almonds
- Pinch of salt
- Gingerbread spice
- 2 tbsp ground cinnamon
- 2 tbsp ground ginger
- 1.5 tbsp ground cardamom
- 1.5 tbsp ground cloves
- Pinch of black pepper
Directions
- Step 1
- *You can buy gingerbread spice from the store or make your own. The recipe for a batch of gingerbread spice comes here.
- Step 2
- Mix all the dry ingredients in a bowl.
- Step 3
- Add the butter and syrup and blend with your fingers until you have a smooth dough.
- Step 4
- Add the shaved almonds. You can also use regular ones and chop them.
- Step 5
- Roll the dough into about 10-15 cm rolls being 5 cm in diameter.
- Step 6
- Roll them into plastic foil and place them into the fridge and let them rest until the next day, alternatively, you can do as mentioned above and freeze the dough. The chilling process will make it easier to cut them as thin as possible.
- Step 7
- Cut the roll into 2mm thick cookies and place them on a baking sheet. You need to leave some room since they will expand a bit.
- Step 8
- Heat the oven to 180°C.
- Step 9
- Bake for about 8-10 min, depending on your oven. They should be a warm brown color.
- Step 10
- Enjoy as they are, make a cake of them or eat with blue cheese.
