This amazing green kale salad with lemon vinaigrette is almost a must-have on the Christmas table. It also contains lots of vitamins, a perfect balance to all the other “not so nutrient-rich” foods one may down this special time of the year. Nevertheless, it tastes amazing and is actually very simple to make.

Christmas kale salad

Ingredients
- Salad:
- 1 pack green kale
- 1 pack baby spinach
- 2 red apples
- Pecan nuts + flake salt
- Pomegranates
- Feta cheese
- Dried cranberries
- Vinaigrette:
- 2 tbsp olive oil
- 1/2 lemons juice
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- Salt & Pepper
Directions
- Step 1
- Rinse the kale and spinach in cold water and leave to dry.
- Step 2
- Roast the pecan nuts in a dry pan with some flake salt.
- Step 3
- Mix all the ingredients for the vinaigrette.
- Step 4
- Place the kale and spinach in a large bowl and pour over the vinaigrette. Mix around so everything is covered.
- Step 5
- Slice the apples and place them on top.
- Step 6
- Crumble some feta cheese over and top with dried cranberries, pomegranate and pecan nuts.
- Step 7
- P.S. If you want to make this in advance, leave the vinaigrette on the side and slice the apple last minute or it will turn brown.
