This granola you guys. Wow. I might even dare to say it’s better than the banana bread granola. Might say. Let me introduce you to blueberry pie granola. It has a strong cardamom flavor and this combined with blueberries and coconuts is heaven. It’s gluten and refined sugar-free as well as vegan on top of everything. The ingredient list may be long, but choose what you have at home. Promise me you will make this, everybody should have this at home!

Blueberry pie granola

Ingredients
- Granola:
- 1 dl buckwheat
- 2 dl glutenfree oats
- 1 dl sunflower seeds
- 1 dl pumpkin seeds
- 1/2 dl shaved almonds
- 1/2 dl linen seeds
- 2 tbsp chia seeds
- 2 tbsp almond flour
- 1 dl pecan nuts
- 1/2 dl coconut sugar
- 1 tsp ground cardamom
- 1/2 tsp pure vanilla powder
- 1/2-1 tsp salt
- 1/2 dl coconut oil
- 1/2 dl maple syrup
- Toppings:
- Dried blueberries
- Coconut shaves
Directions
- Step 1
- Heat the oven to 175°C.
- Step 2
- Rinse the buckwheat thoroughly in water.
- Step 3
- Add all the dry ingredients to a bowl and blend.
- Step 4
- Melt the coconut oil and pour over the dry ingredients along with maple syrup and blend it well. Taste off if more sweetener or salt is needed according to your tastebuds. If not, place the granola onto a baking sheet covered pan and scooch it into the oven and let it bake for 20 minutes.
- Step 5
- Take it out, mix around a little with a spoon so it bakes evenly, and place it back to the oven for another 10-20 minutes.
- Step 6
- Let it cool and add blueberries and shaved coconut.
- Step 7
- Store in a jar.
