Banana Bread Granola. Here it is, my best granola so far. It’s so frickin delish I demand everyone to make it. It’s gluten-free, refined sugar-free and just amazing. Warning! The granola might be eaten before it gets into the granola jar.

Banana Bread Granola

Ingredients
- Granola:
- 2 dl buckwheat grains
- 2 dl glutenfree oats
- 1 dl pumpkin seeds
- 1 dl sunflower seeds
- 1 dl pecan nuts
- 2 tbsp coconut oil
- 0.5 dl maple syrup
- 1 ripe banana
- 1 tsp flake salt
- 0.5 tsp ground cardamom
- 0.5 tsp vanilla powder
- 2 tsp ground organic cinnamon
- Toppings:
- Dried goji berries
- Dried cranberries
- Shaved coconut
Directions
- Step 1
- Heat the oven to 180°C.
- Step 2
- Start by placing the buckwheat grains in a bowl of water.
- Step 3
- Add all the other ingredients to a large bowl.
- Step 4
- Mash the banana with a fork and add.
- Step 5
- Mix with a spoon until all the liquid and spices are evenly blended.
- Step 6
- Rinse the buckwheat thoroughly and add to the mix.
- Step 7
- If you want it sweeter add more maple syrup.
- Step 8
- Spread in a thin layer on a baking sheet covered pan and press into a tight ‘mat’. Bake in the oven for about 15-20 minutes.
- Step 9
- Take it out, break the ‘mat’ with a spoon into desired crumble sizes, flip around a bit, place it back in the oven and bake for another 15-20 minutes.
- Step 10
- The granola should be completely dry. When it’s golden and dry, I usually shut the oven and leave the granola to dry for a few hours while the oven cools.
- Step 11
- Top your granola with whatever you want, a popular combination I love is dried cranberries, goji berries, and coconut shaves.
- Step 12
- Store in a jar or give away as a present.
