Good Morning sunny Saturday. I hope it’s sunny where you are as well. In case you aren’t fed up with banana bread yet, here’s a simple one – Double cranberry banana bread. It’s flavored both with dried and fresh cranberries, giving it the perfect balance of sweet and sour. I feel like everyone is baking banana bread at the moment, nothing wrong with that. Banana bread is one of my favorite things to bake, it’s easy and you whip the dough together in a matter of minutes, and then it bakes itself in the oven. The best part is that it lasts for long if you don’t eat it up of course, which usually is the case in this household. You can freeze it as well.

Double Cranberry Banana Bread

Ingredients
- Double cranberry banana bread:
- 4 ripe bananas
- 3 dl oats
- 2 eggs
- 2 dl almond flour
- 1 tsp baking powder
- 1 tsp soda
- 1/2 tsp salt
- 1/2 dl maple syrup
- 1/2 tsp cardamom
- 1 tsp cinnamon
- 1 dl mixed nuts
- 1 dl fresh/frozen cranberries
- 1/2 dl dried cranberries
Directions
- Step 1
- Heat the oven to 180°C.
- Step 2
- Mash the bananas with a fork. Place in a bowl and add eggs and whip them a bit by hand.
- Step 3
- Add the almond flour, baking powder, soda, salt, syrup, cardamom, cinnamon, and blend into an even dough.
- Step 4
- Add the nuts and cranberries at the end and carefully blend them in.
- Step 5
- Pour the dough into a greased bread loaf and bake in the oven for 45-60 minutes.
- Step 6
- Let cool and enjoy with your favorite topping, mine is almond butter.
