The best Asian noodle salad I know. It’s so easy to make and requires no cooking, just a lot of chopping. And the dressing, I could eat it with a spoon. Promise you will make this ok? This recipe makes 4 servings or 2 veeery generous ones!

The best Asian noodle salad

Ingredients
- Salad:
- 400g shrimps
- 3 carrots
- Red or white cabbage
- Cooked + rinsed glass noodles
- 1/2 broccoli or cauliflower
- 1/3 leek
- 1 red onion
- 1 ripe mango
- 1 chili
- Handful salty peanuts
- 1 avocado
- Sesame seeds
- Coriander
- Sauce:
- 2 limes
- 3 tbsp olive oil
- 2 cm minced/shredded ginger
- 3 tsp agave syrup/honey
- 3 tsp rice vinegar
- 1 tsp fish sauce
- 2 tsp soya sauce
- Black pepper
- Salt
Directions
- Step 1
- Cut/slice all the veggies as thin as you can.
- Step 2
- Cook the glass noodles and immediately after rinse them veeeery thoroughly in cold water (otherwise you will be left with a slimy noodle ball).
- Step 3
- Place all the veggies + noodles in a bowl.
- Step 4
- Mix the ingredients for the sauce and pour it over and blend well.
- Step 5
- Top with avocado, sesame seeds, and coriander.
- Step 6
- SUPER yum.
