It can be very, very tricky to not go crazy on sugar over Christmas. And that’s perfectly ok, but in case you are trying to be healthy here’s the perfect protein treat for you = @barebells mint dark chocolate protein bar turned into healthy after eight truffles. Here’s the recipe. You can’t even tell they are free from refined sugar and packed with protein.

Barebells mint truffles

Ingredients
- 12 truffles:
- 2 @barebells mint chocolate bars
- 150g cream cheese (natural)
- 2 tbsp raw cocoa powder
- 2 tbsp sweetener (stevia, erythritol, agave)
- 0.5 tsp vanilla powder
- 2 tbsp almond flour
- + cocoa powder for rolling
Directions
- Step 1
- Mix the protein bars in a mixer, this may take a while, add the cream cheese and mix until smooth. You MIGHT need to add some liquid like nut-based milk if you don’t have a super-effective mixer.
- Step 2
- Add the cocoa powder, sweetener, vanilla, and almond powder.
- Step 3
- You should reach a texture that can be rolled into small truffles. If it’s too loose, add more cream cheese and almond powder and some cocoa. If too dry, add more cream cheese or some liquid.
- Step 4
- Place the dough in the freezer for 20 minutes, this will make rolling easy peezy.
- Step 5
- Form small truffles, roll them in cacao powder and enjoy this amazing healthy Christmas treat.
- Step 6
- Store in the fridge for up to 1 week.
