Finally 1 of December. I would be lying if I would say I’m not thrilled November is over, what a shit-month. Let’s kick off this Sunday and new month with some healthy gingerbread spice banana pancakes topped with maple syrup oat yoga and hazelnuts. Mmmm.

Gingerbread spice pancakes

Ingredients
- Pancakes:
- 1 banana
- 2 eggs
- 2 tbsp oat flour
- 1 tsp gingerbread spice
- 1 tsp baking powder
- 0.5 tsp ground cinnamon
- Pinch of ground cardamom
- Pinch of salt
- Coconut oil
- Toppings:
- @oatly greek yogurt
- 1 tsp ground cinnamon
- 1 tsp maple syrup
- Chopped Hazelnuts
Directions
- Step 1
- Mash the banana, mix all the ingredients for the pancakes. Let it sit for 10 minutes.
- Step 2
- Fry the pancakes on medium heat in coconut oil.
- Step 3
- Mix the yogo with cinnamon and place it on the stack of pancakes.
- Step 4
- Drizzle with maple syrup and top with hazelnuts!
