Here’s a typical “I don’t have anything at home” dinner à la Michelle. This is from a while back since the light situation in Finland is the following: DARK. It’s dark when you go to work and dark when you come home from work. I haven’t tried out artificial light yet so if anyone has any tips, please fill my inbox. With no further due, here’s the recipe for my quick fix dinner.

Quinoa salad

Ingredients
- 1 dl uncooked quinoa
- Vegetable broth - Liquid or cube
- Half an avocado
- Cherry tomatoes
- Shaved yellow carrot
- Green kale
- 1/2 lemon’s juice
- Sesame seeds
- Olive oil
- Spices
- +
- Chimichurri sauce
Directions
- Step 1
- Cook the quinoa in vegetable broth.
- Step 2
- Shave the carrot and cut your avocado while it’s cooking. Let the quinoa cool down a bit.
- Step 3
- Place all the vegetables in a bowl and add olive oil, lemon juice, spices (I used herb salt, cayenne pepper, onion powder, and some arrabbiata mix I have) and thoroughly marinate the vegetables.
- Step 4
- Place them on top of your quinoa (or mix them in as I would if I would not have to photograph everything) and enjoy as it is or with for instance a chimichurri sauce.
