Here’s some delicious Raw Rocky Road for you all. Speaking of rocky, life sometimes takes some bumpy turns, and this is one of those days you just want to flush down the toilet. Let’s try and turn it into something positive, like focusing on this amazing account and calm zone I have and the progress made here during the past months. Yay. End of the therapy session, here’s the recipe for this insanely delish raw rocky road. This will save me and my attempt of trying to stay somewhere near healthyish this Christmas.

Healthy Rocky Road

Ingredients
- 1 dl cacao butter
- 0.5 dl coconut oil
- 3 tbsp raw cacao powder
- 0.5 dl agave or maple syrup
- 5 tbsp roasted coconut flakes
- 2 dl nuts and seeds
- 0.5 dl dried cranberries
- 0.5 dl dried goji berries
- 1 tsp pure vanilla powder
- Flake salt
Directions
- Step 1
- Place the cacao butter, coconut oil and syrup in a pan and melt on medium heat.
- Step 2
- Once melted, remove from the stove and add cacao powder and the rest of the ingredients, save some nuts and berries for decor.
- Step 3
- You can chop the nuts or add them as a whole as the rocky road will be cut into pieces anyway.
- Step 4
- Place a baking sheet in a pan and fill with the chocolate, about 4-5 cm high.
- Step 5
- I used a 12 x 12 cm pan. Top with some nuts, berries and flake salt.
- Step 6
- Place in the fridge until the chocolate is completely settled, about 2-4h.
- Step 7
- Cut into pieces and store in the fridge.
