Healthy, crunchy Falafels with tahini-sesame sauce. Guys guys guys, especially falafel loving persons, listen up. Not sure about you, but I have tried to make falafels at home a zillion times, and never really been overly impressed. Either they are to dry, too wet, not crispy… you get it. Up to this date I’ve never managed to make somewhat healthy falafels that taste good…we all know that deep-fry crunch but maybe not anything you want to eat every day! The trick here is to swap chickpeas to cauliflower. It’s SO much easier to get them right. Enough nonsense let’s jump right into the recipe. PROMISE me you will try these tonight or save the recipe for a later occasion.

Healthy cauliflower falafel

Ingredients
- Base:
- 1 small cauliflower head
- 1 onion
- 2 cloves garlic
- 1 pack leaf parsley
- 1 pack coriander
- 1 egg
- 1 dl almond flour
- Olive oil
- Spices:
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp paprika powder
- 0.5 tsp Cayenne pepper
- 4 tsp cumin powder
- 2 tsp 7 spices mix (optional)
- Chili flakes
- Sauce:
- 2 tbsp olive oil
- 1 tbsp sesame oil
- 1 lemon’s juice
- 2 tbsp light tahini
- 2 tbsp honey
- Salt & Pepper
- Sesame seeds for decor
Directions
- Step 1
- Heat the oven to 200°C.
- Step 2
- Mince the cauliflower in a food processor.
- Step 3
- Shred the onion and garlic on a grater. Add all the rest of the ingredients to the processor and mix until you have a smooth dough.
- Step 4
- Form small falafels and place them on a baking sheet.
- Step 5
- Brush the falafels gently with olive oil all around and bake in the oven for 30 minutes.
- Step 6
- Check the baking situation, swap places with a few if the corner ones have more color and bake until they are all evenly golden, about 10 minutes more.
- Step 7
- For the sauce, mix all the ingredients in a bowl or a food processor and serve with Falafels.
- Step 8
- We ate this with a simple salad.
