Monday quickie coming up – interpret as you wish but I’m talking about dinner. This spicy peanut butter zucchini carrot zoodle thingy takes literally 15 minutes to make. No excuses you don’t have time to eat healthily. Okok I have the @wilfasuomi spiralizer so this may take you 1 minute longer than it did for me.

Spicy peanut butter noodles

Ingredients
- Zoodles:
- 1 medium-sized zucchini
- 2 carrots
- Olive oil
- Peanutbutter sauce:
- 1 dl peanut butter
- 0.5 dl boiling water
- 1 tbsp hoisin sauce
- 1 minced garlic clove
- 1 tsp rice vinegar
- 1 tsp soy sauce
- 1 tsp sriracha sauce
- 1 tsp dried chili flakes
- Toppings:
- Roasted cashews
- Lime
- Coriander
Directions
- Step 1
- Cut your carrot and zucchini with a peeler if you don’t have a spiralizer into “noodles” also know as zoodles = zucchini noodles.
- Step 2
- Boil the water and add little by little to your peanut butter until you have a smooth sauce.
- Step 3
- Add the rest of the ingredients.
- Step 4
- Add some olive oil to a pan, add the zoodles and fry for a few minutes.
- Step 5
- Add the sauce and mix for a few minutes.
- Step 6
- Top with cashews, lime, and coriander
