Yes, you heard me. Let’s extend the weekend hehe. Jokes aside, these do not taste like vodka (still you better maybe keep them safe from kids) but the alcohol prevents the ice cream from “icing” and instead leaves you with creamier ice cream if you know what I meeeean. Recipe below.

Vodka-coconut popsicles

Ingredients
- 1 can coconut milk (full fat)
- 0.5 tsp pure vanilla
- 1-2 tbsp honey / agave / sugar / stevia whatever
- 1-2 tbsp pure vodka
- Pinch of salt
Directions
- Step 1
- Mix all the ingredients in a bowl.
- Step 2
- You can slowly add vodka to make sure it does not taste like alcohol.
- Step 3
- Pour the mix into ice cream/popsicle molds and freeze for 4 hours or leave overnight.
- Step 4
- Psssst. You can add frozen berries into the mix.
- Step 5
- I rolled the popsicles in some roasted hazelnut and granola before eating.
