If there’s a will there’s a way… If I can’t have my regular bread I will create a bread I can have. This overnight pot bread is so simple to make and tastes amazing (at least for someone who can’t have gluten) Here’s the recipe.. and if you’re not into this gluten-free thing then just make it with whatever flour you want, it will be amazing in all forms.

Gluten-free overnight bread

Ingredients
- 25 g / 1 pack dry yeast
- 500-800 g cold water
- 2 tbsp olive oil
- 2 tsp salt
- 300 g sorghum flour
- 300 g glutenfree oat flour
- or
- 600 g regular flour
Directions
- Step 1
- Mix all the ingredients in a bowl and place in the fridge for 12h.
- Step 2
- If you make the gluten-free version you might need more water, depends a lot on what flour you use.
- Step 3
- The dough should be sticky when it goes for rest overnight!
- Step 4
- Heat the oven to 250°c.
- Step 5
- Take the dough out and form the bread and let it rest while the oven warms up.
- Step 6
- Place a pot in the oven and let it get hot.
- Step 7
- Place an ovenproof bowl with cold water/ice cubes on the lowest shelf in the oven for a super crispy surface on the bread.
- Step 8
- When the oven is warm, take the pot out and place the bread in the pot and bake for 30 minutes with the lid on. Take the lid off and bake for another 30 minutes until the bread is golden.
- Step 9
- Take out and let it cool.
