How about you make some Chocolate Chip Coconut-Oat cookies this sunny Sunday? They are free from gluten and refined sugar. P.S. Make them #veganfriendly by leaving out the egg or replacing it with a flax egg and using palm sugar instead of honey. They might not hold together as well but will for sure taste great regardless.

Chocolate Chip Coconut Oat cookies

Ingredients
- 1 dl oats
- 1 dl shredded coconut
- 1 dl almond flour
- 1 egg
- 0.5 dl honey or palm sugar
- 0.5 dl coconut oil melted
- 1 tsp salt
- 1 tsp vanilla powder
- Sugarfree chocolate
Directions
- Step 1
- Heat the oven to 175°C.
- Step 2
- In a bowl mix all the dry ingredients.
- Step 3
- Add the melted coconut oil, honey, and egg. Mix everything.
- Step 4
- Cut the chocolate into small chips and gently fold in.
- Step 5
- Scoop cookie-sized portion on a baking sheet and press gently for a flatter cookie shape.
- Step 6
- Bake for 10-15 minutes until golden and let them cool on a baking rack.
- Step 7
- Enjoy while they last since I’ve heard these disappear quite quickly.
