Healthy mud cake + Coconut ice cream

Ingredients
- Healthy mud cake:
- 10 dates (or 5 + 1 tbsp palm sugar)
- 1.5 dl almond flour
- 0.5 dl coconut flour
- 0.5 dl shredded coconut
- 7 tsp organic cacao powder
- 0.5 dl coconut oil
- 2 egg
- Vanilla powder
- Flake salt
- Coconut ice cream:
- 1 frozen banana
- 2 tbsp coconut milk
- Vanilla powder
Directions
- Step 1
- Healthy mud cake: Heat the oven to 150°C.
- Step 2
- Mix all the ingredients in a blender. Pour the dough into an coco oiled pan and bake for 15 minutes.
- Step 3
- Guard it with your life cause you don’t want this baby to overcook.
- Step 4
- Coconut ice cream: I’m gonna start with a little life hack. Always have frozen banana in your freezer. End of life hack.
- Step 5
- Throw one frozen bananas in your blender, add some coconut milk and vanilla powder. Mix and serve with your mud cake.
- Step 6
- If you want to go above and beyond, top with some roasted coconut flakes and fresh strawberries.
