Repeat after me: Healthy carrot cake banana bread. This might be the tastiest of all the tasty things I’ve created. If you like carrot cake you will LOVE this. As cherry on the top it does not contain any white flour or refined sugar and is 100% vegan. Here comes the recipe, promise me you will make it.

Ingredients
- Banana Bread:
- 2 ripe bananas
- 2 dl spelt flour
- 1 dl oat flour
- 1 dl almond flour
- 2 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp nutmeg
- 1/2 tsp vanilla powder
- 1/2 tsp salt
- 1 1/2 dl shredded carrot
- 2-4 tbsp maple or agave syrup
- 1 dl oat milk
- Walnuts
- Frosting:
- 1 pack Oatly cream cheese
- 1 lime + lime zest
- 1-2 tsp maple or agave syrup
Directions
- Step 1
- Heat the oven to 180°C.
- Step 2
- Mash the bananas and add the oat milk and syrup. Mix all the dry ingredients and blend them into the banana mixture. Add the carrots and walnuts at the end.
- Step 3
- The dough should be sticky if it does not, add more banana, oat milk or carrots or preferably a bit of everything.
- Step 4
- Grease a loaf pan with for instance coconut oil and shredded coconut or use parchment paper. Bake the bread for 35 minutes. Try with a stick, if the bread is still completely raw, bake for another 5-10 minutes. Take it out and let it cool completely in the pan.
- Step 5
- Mix the cream cheese with the juice from the lime and lime zest and some syrup. Spread it over the cooled bread. Enjoy this magical creation.

- P.S. you can swap the flour for whatever flour you have at home. Use as much or as little sweetener as you wish for your taste.
