Here comes a batch of healthy granola again. This time I added lots of coconut shaves and goji berries.
Healthy buckwheat granola

Ingredients
- Granola:
- 2 dl buckwheat grains
- 1 dl pumpkin seeds
- 1/2 dl flaxseed
- 1/2 dl shredded coconut
- 2 dl oats
- 1 dl almonds
- 1 dl sunflower seeds
- 2 tsp cinnamon
- 2 tsp ground cardamom
- 2 tbsp honey or syrup
- 2 tbs coconut oil
- Toppings:
- Coconut shaves
- Goji berries
- Cranberries
Directions
- Step 1
- Heat the oven to 100°C. Throw the buckwheat in some water while you measure the rest of the ingredients. Mix everything in a bowl, don’t forget to take out your buckwheat from the water, and press into a ’mat’ on a baking sheet covered pan in a thin layer. Bake for a couple of hours or so until golden and flip the mat around a few times. I added some coconut shaves, cranberries, and goji berries at the end.
