I know many (might) want to eat a bit healthier after Christmas and the Holidays, including myself, so January will be quite health-focused. However, I believe in balance so here comes the recipe for an amaziiing cake we made with mum during Christmas. The recipe is from meilläkotona and it’s a Rocky Road Cake.

Ingredients
- Cake:
- 4.5 dl all-purpose flour
- 3 dl sugar
- 1.5 dl organic cacao powder
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 2.5 dl milk
- 2 large eggs
- 1.5 dl oil
- Pinch of salt
- Rocky Road Topping:
- 200g milk chocolate
- 200g dark chocolate
- 75g butter
- 200g oat cookies
- 1 dl caramel candies
- 1 dl mini marshmallows
Directions
- Step 1
- Heat the oven to 180°C.
- Step 2
- Place a baking powder in a round cake pan and grease the sides.
- Step 3
- Mix the dry ingredients in a bowl. Mix the milk with the eggs and stir.
- Step 4
- Add to the dry ingredients and mix to an even dough.
- Step 5
- Pour the dough in the pan and bake for 45 minutes.
- Step 6
- Let it cool completely.
- Step 7
- Make the rocky road meanwhile.
- Step 8
- Melt the chocolates with the butter and when melted, add the chopped oat cookies and caramel candies, I used Fazer Dumle and the mini marshmallows.
- Step 9
- Pour it over the cake.
- Step 10
- Let it cool in the fridge for a couple of hours.
