This was made from leftovers from my dumpling hysteria. You can swap the veggies to whatever you prefer. It’s quick and easy and absolutely delicious. Try out yourself.
Hoisin vegan stir fry

Ingredients
- Noodles
- 2 cloves garlic
- 1 onion
- 1 pack mushrooms
- 1/2 zucchini
- 2 baby pak choi
- 1/2 bouquet broccoli
- 2 tbsp cashew nuts
- 2 spring onions
- 1 tsp sesame oil
- 2 tbs soy sauce
- 2 tbs hoisin sauce
- 1 tsp agave syrup
- Stir fry spice
- Cayenne pepper
- Salt and Pepper
- Sesame seeds
Directions
- Step 1
- Cut the garlic, onion, and mushrooms and fry them in a pan with some oil.
- Step 2
- Cut the zucchini, pak choi, and broccoli and add to the pan.
- Step 3
- Pour in some soy, sesame oil, hoisin and agave, and spice off with something you have at home.
- Step 4
- Cook desired amount of noodles in salted water and when these are al dente, add to the pan with the rest of the stir fry.
- Step 5
- Let it all get some juicy flavor and top off with spring onion and sesame seeds.
