This dish goes as a side with anything. Especially with Keftedes and Tzatziki.
Couscous salad

Ingredients
- 2 dl couscous
- 1/2 sweet red bell
- 1 spring onion
- 1/2 zucchini
- Vegetable broth
- Fresh thyme
- Fresh mint
- Halloumi
- Spices
Directions
- Step 1
- Cook the couscous in 1 cube vegetable broth and let it cool off.
- Step 2
- Meanwhile cut the veggies and herbs and mix with the couscous.
- Step 3
- I added some spiced salt, cayenne pepper, and herbs de Provence spice.
- Step 4
- Top with some fried halloumi.
