Good Monday, hope you had a lovely weekend filled with lots of good food. If you are looking for the perfect side dish for any dish, look no further. This grilled zucchini with feta cheese, olive oil, and salty almonds is beyond amazing. It requires only a few ingredients, so go for a good quality feta cheese. This dish goes very well together with a piece of grilled meat or fish and middle-eastern inspired dishes. We ate the grilled zucchini with feta cheese along with muhammara and grilled chicken.
Use a cast-iron skillet!
If you don’t have a grill a home, which we for instance don’t have in our city-home, you can use a cast-iron skillet instead. We have one with griddles which works amazing when you want that BBQ taste and look, but simply don’t have a grill available.

Grilled zucchini with feta cheese

Ingredients
- 1 large zucchini
- Olive oil
- 1 dl feta cheese
- Fresh thyme
- 1 dl almonds
- Salt & Pepper
Directions
- Step 1
- Start by cutting the zucchini into thin slices with a mandolin.
- Step 2
- Place them on a dry blanket or paper to dry and season with salt and pepper on both sides.
- Step 3
- Heat the cast-iron skillet and add olive oil and fry the zucchini slices on both sides until completely soft.
- Step 4
- In a dry pan, roast the almonds in some salt for a few minutes, at the end, add a little bit of olive oil and turn of the heat. This will give a lovely, smoky flavor to the almonds.
- Step 5
- Assemble the zucchini on a plate and top with feta cheese, a drizzle of olive oil, fresh thyme, and roasted almonds. Sprinkle with salt and pepper if needed.
