This post is in collaboration with Foodin. There are few things I like as much as raw gingerbread dough. I can eat a whole package and note, it should be eaten straight from the freezer, so you barely can cut it into pieces. YUM. While I am loving this habit of mine, my stomach is not as fond of it. I tried to think of how to replace the raw gingerbread dough with a healthier option and I must say, the alternative is not bad at all. Obviously, it will not taste 100% like pure gingerbread dough, but it’s actually not very far from. This version is a whole lot healthier, it’s vegan and free from gluten and refined sugar. These gingerbread bliss balls are the perfect afternoon snack when your energy levels are on the low side.
Diet variations
The gingerbread bliss balls are naturally vegan and free from gluten. I used maple syrup as a natural sweetener in addition to the dates, but you can leave the maple syrup out as well, the dates will be enough. If you are allergic to nuts, you could try to swap the almond flour for regular or oat flour and swap the almond flakes for sunflower seeds and leave out the almond butter and add a bit more oil instead. The spices are very important in this recipe, so do not leave these out. These contain two of my absolute favorite spices from Foodin, cardamom and Ceylon cinnamon, I use them in everything.
Tip!
I usually make a double batch and keep them in the freezer! As they are stored frozen they will last a very long time. I have never managed to find out how long. These are also perfect to wrap up in some cellophane and give away as a Christmas treat.

Gingerbread bliss balls

Ingredients
- 10 dates
- 2 dl Foodin almond flour
- 1 tsp Foodin ground cardamom
- 1 tsp Foodin Ceylon cinnamon
- 1-2 tsp gingerbread spice
- 2 tbsp Foodin MCT oil
- 1 tbsp maple syrup
- 1 tbsp Foodin almond butter
- 2 tbsp almond flakes
- Pinch of salt
Directions
- Step 1
- Pit the dates if you use fresh ones, which I recommend.
- Step 2
- Place the dates along with all other ingredients except the almond flakes in a blender and mix until smooth.
- Step 3
- Gently crush the almond flakes into smaller pieces and add to the dough.
- Step 4
- Form small balls, roll them in almond flakes, and place them in the freezer for a minimum of 2h.
- Step 5
- Enjoy frozen as a snack.
