Let me introduce you to this gluten-free chevre and fig pie, my new favorite salty pie. I came up with this recipe by mistake so to say. I got a huge craving for salty pie one afternoon, and my mind wandered to buttery pie crust filled with cheesy cream filling. However, I must say, this pie beats both buttery pie crust and cheesy cream filling. It’s packed with so much flavor and has the perfect balance of sweet and salty, crunchy and soft. I warn you, it creates severe cravings. Don’t be scared by the long list of ingredients, many of the ingredients might be stuff you already have at home. Promise me you will make this next time your pie cravings hit you, you will not be disappointed.
Diet variations
This gluten-free chevre and fig pie is quite diet-friendly already, as the crust is gluten-free. You can use regular flour if you want or have a nut allergy, but otherwise, I highly suggest you to to try this version if you can, cause it’s so good. The pie can be made 100% vegan if you leave out the egg from the crust and replace it with for instance a flax-egg and skip the chevre cheese or replace it with vegan chevre. I use oat-based cream cheese and cream in this recipe, but if you prefer dairy-based, feel free to swap, the same amount applies.
Tip!
This recipe contains three kinds of onion, for a reason. Onion is extremely healthy and when fried on low heat for long, it becomes soft and sweet, delicious. The pie is topped with caramelized onions to further enhance the flavor combination. If you can’t find fresh figs, use dried ones instead. It will not be as fresh and a bit sweeter, as dried figs are very sweet, but it will nevertheless be very delicious.

Gluten-free chevre and fig pie

Ingredients
- Crust
- 3 dl almond flour
- 1 dl oat flour
- 0,5 dl sesame seeds
- 1 tbsp psyllium
- 1 tsp salt
- 2 tbsp olive oil
- 1 egg
- Filling:
- 1 yellow onion
- 1/2 leek
- 2 red onions
- 1 tbsp olive oil
- Honey
- 2 eggs
- 200 ml oat cream
- 1 pack Oatly cream cheese
- 1 1/2dl chevre (soft)
- 2 tbsp balsamico
- Handful of parsley
- Handful of basil
- 2 handfuls spinach
- 1 tsp herbs de Provence
- 1/2 tsp persillade
- Salt & Pepper
- Fresh/dried figs
- Toppings:
- Rucola
- Caramelized red onion
- Toasted walnuts
Directions
- Step 1
- Blend all the ingredients for the crust in a blender / by hand.
- Step 2
- Press out in a small (15cm diameter) pie form and bake in the oven 180°C for 10 minutes.
- Step 3
- Chop all the onions except 1 red and fry them on low heat in olive oil until golden.
- Step 4
- Add the rest of the ingredients for the filling in a bowl along with the onions, pour into the baked crust and top with figs.
- Step 5
- Bake in the oven for 50-60 min!
- Step 6
- Meanwhile, cut the other red onion into thin slices, fry on low heat in some olive oil until completely soft.
- Step 7
- Add some salt and a few tbsp of water and leave on low heat for about 10 minutes along with some honey.
- Step 8
- The onions are ready when they are soft, sweet, and sticky.
- Step 9
- Top with caramelized red onion, rucola, toasted walnuts, and more fresh figs!
